Bratwurst with Roasted Veggies

Ingredients:

  • 1 ½ lbs Yukon Gold Potatoes, quartered
  • 1 small onion, sweet if possible
  • 1 red bell pepper
  • Roughly 2 cups green veggie of your choice (we chose green beans)
  • 2 tablespoons olive oil
  • Tower Grove Spice Co All Purpose Seasoning
  • 4-5 cheddar bratwurst

Instructions:

  1. Start by prepping your veggies. Cut the potatoes into quarters and slice the onion and bell pepper into thin strips. Trim the ends off the green beans and set aside.

  2. Heat a large skillet over medium-high heat and add the olive oil. Once hot, add the potatoes and cook for 8-10 minutes, stirring occasionally, until they start to brown and soften.

  3. Add the onion, bell pepper, and green beans to the skillet and continue to cook for another 5-7 minutes, or until the vegetables are tender and lightly browned.

  4. While the veggies are cooking, heat a separate skillet over medium-high heat and add the bratwurst. Cook for 5-7 minutes on each side, or until the brats are browned and cooked through.

  5. Once the veggies are done, sprinkle them with Tower Grove Spice Co All Purpose Seasoning to taste. Stir to coat the veggies evenly.

  6. Serve the veggies alongside the cooked bratwurst for a delicious and satisfying meal. Enjoy!

Tips:

  • If you don’t have Tower Grove Spice Co All Purpose Seasoning, you can use a combination of salt, pepper, and any other herbs and spices you like. Paprika, garlic powder, and thyme would all be great additions to this dish.
  • Feel free to use any veggies you like in this recipe. Broccoli, zucchini, or even sliced mushrooms would all work well.
