Ingredients:
3 Eggs, Room Temp
½ Cup Milk, Room Temp
2/3 Cup Flour
2 Teaspoon All Purpose Seasoning
1/3 Cup chopped asparagus.
6 Slices Bacon, Cooked, sliced.
2 Tablespoons Bacon Fat or any other Neutral Oil you prefer.
Instructions:
- Pre-heat Oven to 425 Degrees
- Crack three eggs and ½ cup room temperature milk into medium sized bowl, give it a light turn, enough to break up the yolks.
- Add Flour, Sugar, and All Purpose Seasoning to egg mix, and give until everything is incorporated. The batter SHOULD be slightly runny
- Place Cast Iron Skillet to Heat, Turn to medium low
- Add 2 Tablespoons Bacon fat, or oil of choice to pan.
- Toss in Sliced bacon and chopped asparagus, cook 2-3 minutes
- Dump in batter
- Cook WITH OUT stirring for 3-4 minutes. The key here is to make sure the batter on thr outside of the pan should by rising up.
- Take entire skillet and place it in the over.
- Let bake for about 15-20 minutes. There should be slight puffs of batter browned on top. When you like the color of the tips remove it from the oven.
- Dutch Baby should be able to slide out of the skillet onto a cooling surface.
- Slice Dutch baby into 8 slices and serve with a side of mixed berries
